3 cups dried hibiscus , (dried sorrel)
2 inches of ginger , sliced into thin coins for mild flavor, grated for stronger flavor
4 allspice berries
2 cinnamon sticks
12 of cups water
2 cups of sugar or to taste
Add all ingredients to a pot, cover and bring to a gentle simmer. About 10 minutes.
Then simmer for another 30 minutes to extract all the spices flavor. Cool and refrigerate for stronger flavor then strain the fruits. Serve chilled.
