I always like to go trough it again myself with a butter knife to make sure all the scales are off, because if you don’t you’ll have scales swimming in your sauce and it’s absolutely unappealing and somewhat embarrassing. So to avoid that double check and make sure that the fish is clean. As soon I bring the fish home, I place it in a large bowl. I make few deep cuts across the fish, It helps absorb all the herbs and spices better.
I get two limes and cut them in four lengthwise, that way you’ll get more juice out for the cleaning process. I rub the fish from inside out, sort of if you were giving it a sponge bath lol. Then you add the vinegar and salt and let it sit for 10-15 min, then rinse with cold water and proceed with the spices.
