These fluffy pancakes are absolutely delicious and are enjoyed by my kids on the weekends or any day. I came up with this recipe since now is a very trying time during quarantine and all these ingredients were already in my pantry. You know when you have kids when you buy a small amount of bananas they all go crazy and eat them all at once and then you think to yourself let me buy more so they can enjoy it longer. And then they eat few and leave two bananas until they start developing brown spots or worse. Me as a mother I don’t like waisting food so I incorporated them into my recipe with the coconut milk I made the other day.
I promise you, you will love them and they are so easy to prepare!

Ingredients
- 1 1/2 cup of Flour
- 1/2 cup of oat flour
- 2 ripe bananas
- 3 tbs of brown sugar or more of you like
- 1 1/2 tsp of baking powder
- 2 cups of coconut milk
- 1 tsp of Vanilla
- 1 tsp of coconut oil
- 2 eggs
- 1/4 cup of raisins
- Oil for frying

Instructions
- Add flour, oat flour, baking powder, sugar, bananas, raisins, vanilla and coconut oil.
- Start blending the ingredients.
- Add coconut milk slowly into the mix while blending.
- Add eggs and blend everything. Until it’s all well mixed.
- Set the batter aside for 10 minutes.
- Heat oil in a frying pan.
- Add about 1/3 cup of batter into the pan and fry for 2-4 min on each side. Repeat with the rest of batter.
- Serve hot and enjoy!!!
Recipe Notes
- You may substitute the coconut milk with any milk of your choice!
